Let’s talk about brownies, people…

They are one of my favorite desserts, or whatever you want to call them because frankly most of the brownies I consume are more like a snack lol. I’m not going to try to list what my favorite desserts are because, let’s be honest, it changes every day. BUT you can be sure that brownies will always remain in my top 5.
I was never really on the hunt for the perfect brownie. I always knew what I liked in one though. They had to be gooey and fudgy, almost under-baked. NOT cakey. I’m not a huge fan of cake and any brownies that resembled cake always disappointed me. Then, the other day I checked out the cookbook, The Artful Baker by Cenk Sönmezsoy , from the library. Some of the recipes really intimidated me but then I came across this recipe for Classic Brownies. I thought, hey, I love brownies, haven’t had one in a while but these look delicious so why not. The recipe seemed to be very straight forward so I said “what the hey”.
LITTLE DID I KNOW
I found my perfect brownies.
They’re fudgy. They’re rich, They’re decadent. They’re SO chocolaty. They melt in your mouth. THEY’RE PERFECT. To really take it over the top, I added GLOBS of cajeta to the batter once in the pan before the bake to just provide even more deliciousness. Eating these brownies is like digging for cajeta gold. A true treasure. This is what National Treasure 3 is going to be about.

I am not one to make crazy, hyperbolic statements like this about something so serious so you know it’s real. I shared the brownies with my coworkers and several of them also felt as strongly as I and pronounced these THE BEST brownies they had ever had.
Below is the list of ingredients without the instructions (bc I’m not about to mess with copyright infringement) but I highly HIGHLY encourage you to go to your public library and check out this book or HEY buy the dang thing why dontchya. Even if you don’t make the brownies, the book is a work of art (just look at the cover!), perfect to sit pretty on your coffee table and tempt you until you breakdown and make the brownies 😉
Classic Brownies
Ingredients
- 5.3 oz unsalted butter 10 tbsps and 2 tsps + more to butter the pan
- 10.6 oz bittersweet chocolate (70%) coarsely chopped
- 2/3 cups all purpose flour
- 2 tbsps Dutch-processed unsweetened cocoa powder
- 1/2 tsp fine sea salt
- 3 large eggs
- 225 grams granulated sugar 1 cup + 2 tbsps
- 1/3 cup Dulce de Leche or Cajeta for funzzies, totally optional
