Wow, it’s been a minute.

I cannot believe how many months it has been since I’ve last posted. Everything 2020 has brought has been very overwhelming. This is one of those super simple meals that I’ve made during quarantine that doesn’t seem too daunting or challenging.
One of my favorite meals my mom used to make when I was little was sloppy joes. I’d always imagine eating it like Mary Kate and Ashley in It Takes Two but I never did because obviously, my mom would not be happy with me. If you don’t get the reference, you have to go watch it! It’s the perfect, happy, and silly movie to watch, especially right now. Plus, these sloppy joes make great leftovers.


Simple Sloppy Joes
Ingredients
- 2 lbs ground beef
- 1 yellow onion chopped
- 3 tbsp white vinegar
- 3 tbsp water
- 3 tbsp brown sugar
- 3 tbsp worcestershire sauce
- 3 tsp chili powder
- 1 1/2 cups ketchup
- kosher salt
- ground black pepper
- 2 tbsp flour
- 8 Hamburger buns
- pickle chips or sliced pickles dill or bread & butter pickles, optional
- mustard optional
Instructions
- Brown the ground beef on medium heat in a large pan, seperating it into small chunks. Then, drain fat from the pan.
- Add onion and cook until softened.
- Add all remaining ingredients to the pan and combine.
- Let simmer on medium/low for 10 minutes.
- If you're toasting your buns, do so while the filling simmers.
- Spoon filling onto buns and top with pickles and/or mustard (if using)
